Watermelon and Feta Bites with Mint

Seedless watermelon
French feta cheese
Fresh mint
Balsamic vinegar

Cut the peel and the light pink outer edge off the watermelon. Start by cutting your watermelon into a block, then slice it approximately 1/2 inch thick. Cut it into little squares about 3/4 inch. Slice tiny squares of feta cheese about 1/4” and put them on top of the watermelon turning them slightly so that the squares don’t align. Cut the mint leaves in a chiffonade, stack them roll them tightly and finely slice them into thin ribbons. Place a small bowl in the center of the platter for balsamic vinegar for dipping. Arrange the watermelon feta squares on your platter. Just before serving sprinkle each square with the thin ribbons of mint. Serve toothpicks alongside.

Just made your watermelon/feta/mint into a tossed salad…added sliced red onion and cucumber……top with balsamic vinegar……YUMMY
