Glazed Beets with Feta Cheese and Fresh Mint

The farmers market had red and golden beets today. I don’t see them around here that often so I wanted to create a beautiful appetizer.

Roasting brings out  a depth of flavor, the red beets are sweeter than the golden ones but the golden beets give a dish a pop of color.

You’ll love the addition of the balsamic glaze on the beets and the fresh mint, it brings the whole dish together.

Glazed Beets with Feta Cheese and Fresh Mint

Glazed Beets with Feta Cheese and Fresh Mint

6 Fresh beets
feta cheese (1/8 of a pound)
4 sprigs of fresh mint
¼ cup balsamic vinegar
salt and pepper

Preheat your oven to 400 degrees. Wash the beets, wrap them in foil, place on a 4 sided baking sheet and roast in the oven for 45 minutes to 1 hour. Let them cool to room temperature, trim the ends and slip the skin off.

Put the balsamic vinegar in a small pan and let it reduce in half. This can be done ahead.

Slice the beets thinly and arrange on plates. Brush with the balsamic glaze and sprinkle with kosher salt and pepper. Crumble feta cheese and sprinkle on top. Remove the mint leaves from the stems and stack them on top of each other. Roll them lengthwise and thinly slice. Separate the pieces and sprinkle on top.

Serves six
