Bacon Wrapped Asparagus Recipe
Bunch of fresh asparagus; look for firm stalks and tight buds
Pound of Bacon
Line a four-sided baking sheet with parchment paper. Wash asparagus and lightly peel the stalks. Partially cook the bacon until it starts to brown but it is still malleable. Drain the bacon on paper towels and wrap a piece around each stalk. Place a toothpick in each end to hold the bacon in place and place on the baking sheet.
At this point they can be refrigerated. Preheat oven to 425, letting the asparagus come to room temperature. Place the bacon wrapped asparagus in the oven for 7 minutes then using tongs flip them over. Let cook approximately 5 minutes more until the asparagus is cooked through and the bacon is crispy. Drain on paper towels. Then double a paper towel and hold each spear securely in one hand and pull out the toothpicks.
